In 2019, I created a virtual gourmet group called “Kaust, what have you cooked today?”, which now counts 510 members. During lockdown the group really blossomed as I was also sharing inspirational posts/recipes.

As for the themed cooking challenges, they really made a difference when the lockdown first started. The challenges were very well received because everyone was at home, cooking more than usual, since the restaurants were closed.

Both have kept our spirits up in time of isolation.

Golden roasted lemon-garlic chicken

Foolproof recipe for the classic roast chicken!

Serves: 4 portions

Cook and prep time: 1 hour

Ingredients:

  • 1 whole small chicken (700g)
  • 75 g melted butter
  • 2 crushed garlic cloves
  • 1 lemon (zest it and then cut it in quarters)
  • chopped parsley leaves
  • to taste salt and freshly ground pepper
  • 1 spring of fresh rosemary

Instructions:

  • Preheat the oven to 230C/450F and prepare your roasting tin by lining it with aluminium foil and spraying the roasting rack with oil. Put the rack on top of the tin.
  • Mix the melted butter with the parsley leaves, the lemon zest and the garlic.
  • Season the chicken liberally with salt and pepper all over, including the cavity.
  • Brush the chicken with this mixture, and with your fingers insert some under the skin on the chest.
  • Fill the chicken cavity with the lemon quarters and the rosemary spring.
  • Place the chicken on the roasting rack with the chest down, put it into the oven to roast for 25 minutes.
  • After this time, turn it upside down, grease it with the remaining butter mixture and put it in the oven for another 20 minutes.
  • Then increase the oven temperature to 260C/500F and leave until it becomes golden and the internal temperature of the chest has reached 75C/165F.
