In 2019, I created a virtual gourmet group called “Kaust, what have you cooked today?”, which now counts 510 members. During lockdown the group really blossomed as I was also sharing inspirational posts/recipes.

As for the themed cooking challenges, they really made a difference when the lockdown first started. The challenges were very well received because everyone was at home, cooking more than usual, since the restaurants were closed.

Both have kept our spirits up in time of isolation.

Sărățele aka the best savoury snacks you’ll ever have

There can't be a celebration of any kind in Romania without these addictive little appetisers called "Sărățele". There is no perfect translation for their name but the closest would be salties. They are soooo good! Imagine the most buttery and melt in your mouth short crust crackers topped salty feta cheese, seeds and salt flakes. I used on top for the majority caraway seeds as I love them so much and on some sesame seeds.

Serves: I wouldn’t know as I always eat too many haha

Cook and prep time: 50 minutes

Ingredients:

For the dough:

  • 600g of flour
  • 10g of dry yeast 
  • 100ml of luke warm milk 
  • 1tsp sugar
  • 3tsp salt
  • 350g of room temperature butter 
  • 3 egg yolks

For the top:

  • 1 egg white mixed with 1 tablespoon of milk for brushing them on top
  • Grated cheese
  • Seeds of your choice (again my top favourites are carraway seeds
  • Salt flakes
  • Flaked chilli 

Instructions:

  • Mix the flour with the sugar, salt and yeast. Add the butter and combine till it looks like crumbs. Then add the egg yolks and milk and kneed till the dough comes together and it's smooth.
  • Divide the dough in two, wrap it in clingfilm and refrigerate for 30 minutes.
  • Preheat the oven at 350F.
  • Take the dough out of the fridge and roll it 6mm thin.
  • On a lightly floured surface with the help of a pizza cutter straighten the sides of the rolled dough.
  • Brush it with the egg white and milk mixture, grate some cheese on top and top it with seeds and salt flakes. 
  • Lightly press the seeds into the dough and cut it in 2cm wide and 8-9cm long strips placing them on a baking sheet lined with baking paper.
  • Bake the sărățele for 20-25 minutes or until golden.
  • Let them cool and enjoy.
